I made chicken stock tonight out of a chicken carcass and some veggie ends and I’m so proud of myself. I always feel so successfully domestic when I make something from scratch like that—like I’m connecting with my human roots as a Maker Of Foods or something.

Thank you! It turned out...somewhat gelatinous, but it liquefies again when warmed, so I'm counting it a success!

You mean you accidentally made chicken aspic? That's pretty common when making stock, and honestly, it's a desired result.
